About Red-stem celery
Celery is a demanding crop with an unusual origin: its wild ancestor is a marshland plant, which explains its persistent thirst and its intolerance of dry soil. Wild celery is strongly flavoured and was used medicinally long before it was eaten as a vegetable. Traditional varieties are blanched by earthing up or wrapping to reduce bitterness and toughen less, while self-blanching types were bred to reduce that labour. Bitterness and stringiness in garden celery usually trace back to a check in growth — drought or heat — rather than to the variety.
