About Potato — Coliban (early)
Potatoes were domesticated in the Andes, where thousands of local varieties are still grown, and the plant is a member of the nightshade family alongside tomatoes and capsicums. The tubers are swollen stems, not roots, which is why they can sprout. Green patches on a tuber indicate light exposure and the presence of solanine, and are cut away. The catastrophic dependence on a very narrow genetic base in nineteenth-century Ireland — most of the crop being closely related — is the standard example of what monoculture does when a disease arrives.
